Erica's Cornbread
Ingredients:
2 C. Yellow Cornmeal
1.5 C. AP Flour
2 tsp Diamond Crystal Kosher Salt
2 tsp baking powder
1 tsp baking soda
2 C full fat buttermilk
3 eggs
1/3 C. melted lard or bacon fat, divided
Recipe:
Preheat oven to 425.
Heat bacon fat in 12” cast iron skillet.
Mix dry ingredients together.
Mix wet ingredients together (except melted fat).
Mix wet ingredients into dry ingredients. Add 1/2 melted fat.
Pour batter into hot skillet with remaining fat — batter should sizzle when it hits the fat.
Bake 20-25 minutes or until toothpick inserted comes out clean.
