Chickpea Naan Tacos

Wildly delicious. Wildly.

Ingredients

  • 2 cups (1 can) of chickpeas, rinsed

  • 5 tsp of grated fresh ginger

  • 1 heaping tsp of crushed garlic

  • 1 tsp of crushed red pepper flakes

  • 1 tsp of turmeric

  • salt to taste

  • 3 tbs ghee or melted butter

  • 4 mini naan

Toppings

  • Plain Greek yogurt

  • Thinly sliced red onion

  • Chopped fresh mint leaves

  • Melted ghee

Instructions:

  1. In a skillet over medium high heat add ghee/butter, and mix chickpeas, ginger, garlic, hot pepper, turmeric, and salt. Fry until the outside of the chickpeas are browning and inside is still soft.

  2. Layer chickpea mix into a warm mini naan, with all toppings. Enjoy (makes 4 tacos/2 servings)
