Chickpea Naan Tacos
Wildly delicious. Wildly.
Ingredients
2 cups (1 can) of chickpeas, rinsed
5 tsp of grated fresh ginger
1 heaping tsp of crushed garlic
1 tsp of crushed red pepper flakes
1 tsp of turmeric
salt to taste
3 tbs ghee or melted butter
4 mini naan
Toppings
Plain Greek yogurt
Thinly sliced red onion
Chopped fresh mint leaves
Melted ghee
Instructions:
In a skillet over medium high heat add ghee/butter, and mix chickpeas, ginger, garlic, hot pepper, turmeric, and salt. Fry until the outside of the chickpeas are browning and inside is still soft.
Layer chickpea mix into a warm mini naan, with all toppings. Enjoy (makes 4 tacos/2 servings)
