Green Tahini
A dip! A sauce! A spread! Just great on everything from falafel , to arayes, to a crudites platter.
1 bunch cilantro
1 bunch parsley
3 garlic cloves
1-2 serrano peppers
1 tsp cumin
1 tsp salt
1 c tahini
1/4 c lemon juice
3/4 c water
Pulse herbs (leaves and tender stems), garlic, serrano, cumin, and salt in the food processor until it is like pesto.
Add tahini and lemon juice. Process for about 30 seconds (mix will be very thick and greyish)
With motor running, drizzle in water and process until sauce is light green and the consistency of yogurt.
Taste for salt
